The study author's stated explanation is that strawberries lack hydrogen peroxide and carbamide peroxide, the agents that actually break down chromogens inside enamel. She also stated that strawberries contain a high concentration of citric acid with only trace amounts of malic acid, varying with ripeness and storage, and suggested that public unfamiliarity with malic acid is itself part of why the myth persists.
