Evidence

No source found identifies 8:00 pm, or any clock time, as a threshold after which carbohydrates are stored preferentially as fat. That specific mechanism does not appear in the literature.

On carbohydrates specifically: the Sofer 2011 six-month randomized trial assigned 78 officers with obesity to calorie-matched diets, with the experimental group eating roughly 80 percent of carbohydrates at dinner. That group showed greater weight loss, greater waist circumference reduction, and greater fat mass loss than controls. This is the opposite direction of the "no carbs at night" folklore.

On total intake versus timing under controlled conditions: Ruddick-Collins 2022 ran a randomized crossover trial in 30 people with overweight or obesity, comparing four weeks of morning-loaded calories (45/35/20 across breakfast, lunch, dinner) against evening-loaded (20/35/45), matched for total energy. The authors reported no difference in total daily energy expenditure, no difference in resting metabolic rate, and no difference in weight loss. The morning-loaded arm reported significantly lower hunger.

Countervailing evidence: Vujović 2022, a tightly controlled randomized crossover trial in adults with overweight and obesity, held calories, activity, sleep, and light exposure constant and found late eating increased hunger, raised the ghrelin-to-leptin ratio, reduced waking energy expenditure by roughly 59 kcal per day, and shifted adipose tissue gene expression toward fat storage. That trial lasted only days and did not measure actual weight change.

Meta-analytic evidence: Young 2023 found that within energy-reduced diets, earlier distribution of intake produced greater weight loss of 1.23 kg (95% CI 2.40 to 0.06). Liu 2024, pooling 29 RCTs, found earlier caloric distribution associated with 1.75 kg greater weight loss (95% CI 2.37 to 1.13). These are modest effects, and adherence and actual intake were not always tightly controlled.
