Summary

The basic idea here is real, but the specific claim overstates it. Research does show that cooking carrots and eating them with a little fat, such as olive oil, helps your body absorb more beta-carotene, which it converts into vitamin A. Human studies found absorption rose from about 41 percent to about 65 percent when carrots were cooked and pureed, and lab digestion models show olive oil boosts this further. But the "three times more vitamins" figure could not be traced to any actual study, and published results range widely from under 2 times to nearly 9 times depending on the method used. Cooking does not create more vitamins. It reduces total carotenoid content and cuts vitamin C, while making the remaining beta-carotene easier to absorb. Heat also does not "melt" cell walls. It softens pectin and disrupts cell structures, which is a different process. Notably, the original post itself was carefully worded and said only that cooking "may help" absorption. The dramatic number and the melting language were added afterwards.

Evidence

The general phenomenon in the post is real and well documented in peer-reviewed literature. The specific wording of the viral claim is not.

On cooking and oil: Although thermal treatment during cooking had a negative impact on the carotenoid content, a positive effect on micellarisation of carotenes and therefore on their bioaccessibility was found. Carotenes transferred to the digests were micellarised to a higher extent from cooked carrots (52%) than from crude carrots (29%) . The highest amounts of micellarised carotenes (80%) were found in the digest prepared from cooked carrots containing 10% olive oil . The authors concluded that both processing and mainly lipid content (cooking oil in this case) significantly improve carotenoid bioaccessibility from carrots, and therefore may increase bioavailability in humans .

In actual humans: Carotenoid mass-balance calculations indicated that 65.1 +/- 7.4% of the beta-carotene was absorbed from cooked pureed carrot meals, versus 41.4 +/- 7.4% from raw, chopped carrot meals. Significantly more beta-carotene was absorbed from meals containing cooked, pureed carrots than from meals containing the raw vegetable . That is roughly a 1.6-fold increase, not threefold.

The figures reported across the literature vary enormously depending on method and measurement. One frequently cited comparison found the bioavailability of beta-carotene from stir-fried carrots was approximately 75%, compared to only 11% from raw carrots , which is closer to sevenfold. A 2024 in vitro study reported statistically significant increases in total carotenoid bioaccessibility with both intensity and duration of treatment, with increases in carotenoid bioaccessible content ranging from 6.03-fold (microwave) to 8.90-fold (baking) for the most intense cooking conditions tested .

On the mechanism: heat does not melt anything. Heat processing results in softening of carrots by changing pectin structure, with the amount of pectin in water soluble solids increasing substantially upon heat processing . Heating of vegetables causes changes in texture due to the breakdown of structures (membranes, cell walls) and modifications in pectin, so culinary treatments usually lead to softening and disruption effects in the food matrix that increase the release of compounds, including carotenoids . The barrier is also more than the cell wall: beta-carotene is located in the chromoplasts, surrounded by a double bilayer membrane, of plant cells surrounded by a cell membrane and a cell wall, where it is often associated with proteins and residual membranes, so several physical barriers have to be broken before beta-carotene can be released .

On "more vitamins": cooking does not add vitamins and reduces several. Cooking carrots reduces levels of vitamin C but increases availability of beta-carotene, a precursor of vitamin A . Beta-carotene is also not vitamin A itself. In isotope-labelled human feeding studies, carrot beta-carotene conversion to retinol was 14.8 +/- 6.5 to 1 by weight, with a range of 7.7 to 24.5 to 1 .
